How to Use Amarone Wine with Food and Game

Amarone is an Italian red wine of unusual character with a rich and distinctive history all of its own. It originated in the regions of Verona and Venice and goes well with stronger flavored foods. We prefer it with stews but because of its richness, it also goes well with cheeses, salads and antipasti.
History and Character
It is one of the great wines to use with light game such as wild boar, venison, pork, and antelope because despite its rich fruity flavor it has the right qualities to cut through and clean the taste of game.It is one of the four largest selling wines in Italy but most people have probably never heard of it. They are Chianti, Asti, Soave and Amarone. Amarone is made from blends of the Covina Veronese, the Rondolina and the Molinara grapes that are dried on racks to intensify their flavor Concentrating the grapes in this way gives Amarone a very distinctive rich fruity flavor. Drying also contrates the sugars in the grapes giving Amarone a higher alcohol content
The wine can be taken young or old and when aged to 20 or 30 yearsill age magnificently, When young, it is a bright purple that ages to a dark garnet after thirty years or more. Usually, it is drunk at 10 years.
