How to Use a Pinot Grigio with Game
Pinot Grigio can taste quite differently depending on where it is grown. The Italian wine that is grown high in the foothills of the alps in the Valley of the Adige The soil is thin here and produces a light, crisp, delicate and very refreshing wine. This makes it ideal for Pheasant, Shellfish and delicate tasting fish like sole and catfish.
The California Pinot Grigios are grown in much richer soil and therefore are somewhat more full bodied and fruitier in taste. They will go well with chicken, Wild Turkey, partridge and Quail
History and Characteristics
Pinot Grigio because of it lightness and drinkability is fast gaining on Chardonnay as the nation's house white. It is the Italian name for what the French call Pinot Gris, a light, crisp delicate wine that does not interfere with the flavors of a mild tasting dish. It goes beautifully with chicken, fish, cheese, turkey and of course, any kind of fish. For years, Pinot Grigio was considered a varietal that could only flourish in northern Italy. But wine lovers have been persuaded that the gentle climate of California, Oregon and Tuscany may be even more ideal for Pinot Grigio production. It is a delight to drink. The round, lightly floral wine with a refreshing crisp taste always makes me want to take another sip. Historically, The present white Pinot Grigio began in 1961 when the Santa Margherita oenologist had what proved to be a brilliant idea. He decided to try the white vinification technique used for the production of French Champagne on the pinkish Pinot Grigio grapes from Trentino-Alto Adige. This is what led to the creation of what we now know as Pinot Grigio white that has since continued to gain in popularity both in Italy and abroad, maintaining a clear leadership in the Pinot Grigio D.O.C. category.
French Pinot Gris wines tend to come from the Alsace region. These are much more fruity and flowery, though they still have that mineral aroma. Flavors can range from peach to grapefruit to melon.

Editorial on Corruption
I am 79 year of age. I have lived through the Great Depression, WWII, the Korean War, the Vietnamese War and the Iraq War. I have never known a time of such widespread corruption.
Iraq
We have been lied to about Iraq. There were no weapons of mass destruction.
I live near NYC. I lost friends in 9/11. Their children are fatherless. Nineteen out of 25 hijackers were Saudis. The money that paid their expenses was Saudi. Whom did we attack - the Iraqis. That doesn't make much sense unless you know that the Bushs and the Bin Ladens did business together.
We are a Christian Army of Occupation in a hostile Muslim land. We have almost 1,000 war dead, over 5,000 war causalties and over 11,000 occupation casualties in Iraq - about 17,000 of our children.
We have already spent almost $200,000,000 on the war, money which should have gone to finding Bin Laden.
Ahmed Chalabi, the Pentagon's $350,000 a month man in Iraq was passing secret data to the Iranians. (He has since moved to Teheran).
The White House has condoned torture (the Gonzalez memo). Our Military is running torture chambers in Iraq and Afganistan (Abu Ghraib et al). The CIA or the Pentagon still has privete contractors running torture chambers in Afganistan
The Iraqis' oil money has been handed out to favored US contractors (Didn't we say it belonged to the Iraqi people and we would not touch it.)
Even Worse
Our Churches are rocked with scandal (I was raised a Catholic)
Our great corporations are being raped (Enron, World Com, Adelphia, et al)
People like Kenneth Lay, Rigas, Skilling, Sam Waksal and Ebbers steal invstors blind and then pass rules that employees cannot sell the stock in their retirement accounts (of course after they have sold theirs).
The heads of our great corporations vote themselves $100 million plus bonuses by the shovelfull.
Politically connected corporations like Haliburton get "No Bid", "No Competition" contracts.
A $350 million dollar plus Iraqi reconstruction contract is handed out to three unnamed individuals with a Jordanian partner
Our great Banks and Brokerage houses are being fined for false stock "buy recommendations" made to get or keep investment banking business.
Natural gas traders are raping consumers with false trades that explode our utility bills and raise our taxes.
Our National Parks are being clear-cut and strip mining is poisoning ow waterways.
Thousands, if not millions of people have had their earnings siphoned away by high gas prices and seen their jobs go to China, India and Indonesia where labor is paid 10 cents an hour.
The Labor Dept. says most of the small recent job growth is in low paid immigrant type work.
Who is going to pay for all of this - not the rich. We are - ordinary citizens and eventually with our Social Security and our Medicare. Today, (July 28) the Govt cut the payments for chemotherapy drugs.
The biggest tax cuts go to the very rich.
My wealthy friends look down their noses at me and say, "You don't understand how (Wall Street), (the Economy) or (Washington) works". Perhaps I do and that is what disgusts me. No one has a conscience anymore. It is grab what you can and the Devil take the hindmost.
Fortunately, we have an election coming. Hopefully we will throw the rascals out.
